The grapes to produce Cannonau di Sargegna DOC “San Costantino” Poderi Parpinello  were hand-harvested from a selection of the best bunches in the vineyard. Vinification took place with selected yeast in stainless steel tanks at controlled temperatures of between 20 to 22°C. Cannonau di Sargegna DOC “San Costantino” Poderi Parpinello  was then underwent maceration for 10 days to extract the desired level of flavours, colour and aromatics, before being bottle aged.
Cannonau is the most important and exclusive red wine grape native to Sardini, as it is thought to be the oldest variety in the Mediterranean. The vineyard is located on a gentle slope between Alghero and Sassari. It sits atop a mixture of geological formations such as calcareous marne, conglomerate and sandstone. The vineyard is planted with a high density of vines. The newest innovations are implemented in the cultivation of the vineyard, while respecting the traditions and ecosystem of the
geographical location. Pruning and harvesting take place manually. The meticulous selection of grape clusters ensures optimum quality.
The Parpinello family has run this 15 hectare estate and winery with dedication and passion for three generations. Giampaolo Parpinello and his son Paolo strive to reflect the Sardinian terroir and reveal the typicity of the wines. Poderi Parpinello winery is situated on a gentle slope between Alghero and Sassari in the north west of the island. In order to reflect this typicity, modern winemaking technology is successfully combined with traditional farming methods, resulting in high quality wines with intense aromas and flavours.
