The grapes to produce the Chablis 1er Cru Fourchaume Domaine Jean Goulley were carefully selected and fermented with natural yeasts in temperature controlled stainless steel vats to showcase the characteristics of this impressive terroir. The Chablis 1er Cru Fourchaume Domaine Jean Goulley was matured for 18 months in stainless steel on its fine lees to gain texture, weight and complexity. Fourchaume is a Premier Cru vineyard in Chablis.
This vineyard has a similar exposure to the Chablis Grand Cru vineyards which lie across the Fontenay Valley, to which Fourchaume wines are often compared. The grapes come from a parcel which includes some vines which are 60 years old. The Double Guyot trained vines are planted to a density of 5,700 vines per hectare and yield a maximum of 55 hectolitres per hectare. The soils are made up of kimmeridgian, rich in clay and limestone with fossilised sea shells; and are renowned for producing fine wines with mineral characteristics. Domaine Jean Goulley’s vineyard is certified organic.
Domaine Jean Goulley was formed in 1986 by Jean Goulley and is now run by his son Philippe. The family own 4.5 hectares in the Premier Cru districts which are the heart and soul of the Domaine. They own approximately 18 hectares in total and produce around 11,000 cases a year. In 1991, the domain became one of the very first certified organic producers in Chablis. All of the vineyards are farmed organically and the wines are produced with restricted use of sulphur. Philippe believes the organic farming methods permit expressive and sustainable soil. Their wines are mineral, pure and lively.
