The grapes to produce Chardonnay Viña Edmara were hand picked, destemmed, crushed and chilled quickly to preserve the aromatics and varietal flavours. They were pressed and the musts were then separated into different qualities in accordance with the amount of pressure exerted during the crush. The Chardonnay Viña Edmara juice was clarified at 8°C by decantation and then fermented in stainless steel tanks at low temperatures of 14°C. A touch of oak added complexity.
The grapes are carefully selected from vineyards located in the Valle Central, Chile, where the vines are grown in mainly textured soils.
