To increase the sugar concentration in the almost-ripe grapes, the Chenin Blanc Late Harvest Margaret River Cullen was cane cut before being hand picked on the 10th March. The grapes were pressed and transferred to new oak barrels and a concrete egg. Fermentation was carried out using indigenous yeast. Fermentation came to an early finish two weeks later by chilling, leaving the wine sweet. The wine was filtered and then bottled soon after to preserve freshness.
Chenin Blanc was planted on the Cullen Vineyard Estate in 1976, which is a certified biodynamic, carbon neutral and naturally powered estate. The soils are old, granite and gravely sandy loam, overlaying lateritic subsoils.
