The best bunches of Chianti Classico DOCG Bonacchi grapes were vinified immediately in temperature controlled stainless steel vats. Daily pumping over took place, in conjunction with rack and returns of the wine, to obtain the desired level of extraction of flavour, colour and structure to the wine. Malolactic fermentation occurred spontaneously after the alcoholic fermentation. Chianti Classico DOCG Bonacchi was matured in large oak barrels, adding complexity to the resulting wine.
The Sangiovese grapes are grown in a limited area in the provinces of Florence and Siena. The vines are spur cordon trained and are grown in marl and limestone soils. The grapes are harvested at optimal ripeness using traditional methods and modern automated machinery to ensure the optimum freshness of the berries.
