The grapes to produce Cortese Piemonte DOC “Adelasia” San Silvestro were harvested at optimum maturity and phenolic ripeness. They were gently pressed prior to fermentation, which took place in stainless steel tanks at a controlled temperature of 18 to 20°C and lasted for approximately 10 days. Cortese Piemonte DOC “Adelasia” San Silvestro was left to rest in tank for four months, preserving the freshness and purity of fruit, prior to being bottled.
The Cortese is a white grape variety typical of the Piemonte area. It is grown on the Monferrato hills, in marl clay and sandy soils. It is not a very robust variety and requires good climatic conditions in order to ripen properly, but has found its place in the vineyard on these hillsides producing a fresh wine and rich in minerality, expressing the terroir of the Monferrato hills. The wine takes its name from the beautiful Princess Adelasia, the bride of Aleramo, who was the first Marquis of Monferrato.
San Silvestro is located in the territory of the Commune of Novello. The grapes are mostly grown in the Langhe and from vineyards found in the Roero and the Monferrato regions. San Silvestro represents the continuation of a project begun by Giovanni Sartirano which has been passed down through four generations. Today it is run by cousins Paolo and Guido Sartirano and San Silvestro has gradually expanded beyond the local market and their wines can be found around the world.
