The grapes to produce Merlot Reserva Curico Valley Viña Echeverría were fermented to dryness in stainless steel tanks for seven to 10 days at controlled temperatures of between 25 to 28°C with selected and native yeasts. 100% of Merlot Reserva Curico Valley Viña Echeverría underwent malolactic fermentation, before being aged in 225 litre used Frenchoak barrels for four to five months to add complexity and to achieve softer tannins.
The grapes were cultivated in the Central Valley (Entre Cordillera). Selected from several vineyards within the Central region, including the Curico, Maule and Colchagua Valleys, each terroir imparted complexity to the resulting wine. The climate in this region is Mediterranean with a long, dry summer season and intense sunlight. There is a marked diurnal temperature range and this difference between day and night temperatures encourages the concentration of flavours in the berries.
