The grapes to produce Pecorino Terre di Chieti IGP “Safari” Bove were gently pressed and fermented at low temperatures in stainless steel tanks to retain the refreshing and fruity characteristic of the Pecorino variety. Pecorino Terre di Chieti IGP “Safari” Bove wine was left to rest in tank prior to release.
The vineyard is located in the Chieti province of Abruzzo, on the eastern coast of Italy and is influenced by the Adriatic Sea. Pecorino is an early ripening variety that tends to naturally produce low yields even without severe winter pruning. The vines are trained on a traditional vertical trellis system called Pergola Abruzzese, in clay and limestone soils.
Bove winery comprises 60 hectares of well located vineyards under the watchful eye of oenologist Dott. Vittorio Festa. Since the winery was founded in 1930 it has become one of the best producers in the region perfectly balancing tradition and innovation with quality and value. The low yields, rigorous grape selection, up-to-date vinification techniques and refined ageing of their red wines in oak barrels ensures a growing reputation for top-class wines.
