The Prosecco Brut “Fili” Sacchetto must was obtained by gently pressing the grapes in a horizontal press, followed by slow, temperature controlled fermentation with selected yeasts. Prosecco Brut “Fili” Sacchetto was made gently sparkling by the Charmat method; the sparkling wine was then aged in stainless steel tanks to preserve the freshness and pure fruit aromatics. Further refinement took place in bottle, prior to release.
Prosecco sparkling wine is made from the Glera grape variety, which was until recently also referred to as ‘Prosecco’. Changes in the laws governing the DOC mean that the grape can no longer bear the same name as the geographical area. The grapes for this wine come from the Treviso area in Veneto.
Cantina Sacchetto was founded in 1920 and today is run by Filiberto Sacchetto, his son Paolo and daughter Beatrice who oversee all aspects of the winemaking process and aim to produce the best possible examples of wines for which the Veneto region is famous.
