The bunches to produce Sauvignon Blanc Late Harvest Curico Valley Vigña Echeverría were hand harvested and then carefully selected. Whole cluster pressing of Sauvignon Blanc Late Harvest Curico Valley Vigña Echeverría took place with a 48 hour static sedimentation prior to fermentation. The grapes were then fermented with selected yeasts at a constant temperature of 18°C in stainless steel tanks for 45 days. The wine was then transferred to French oak barrels for moderate ageing.
Viña Echeverria´s vineyards and winery are located in Molina in the Curico Valley at an altitude of 243 metres. Situated on the 35th parallel south, between the towering Andes Mountains and the cool Pacific Ocean, this privileged viticultural zone with its cold nights and warm dry days, intense sunlight and long growing season is ideally suited to produce healthy vines and grapes. The cooling influence of the oceanic breeze allows both red and whites grapes to achieve outstanding fruit aromas and exceptional colour concentration. The rows are planted in an east-westerly direction, to maximise the sun’s exposure. Working with a model of micro viticulture, each plot, of no more than half a hectare, is identified according to its terroir and microclimate and planted accordingly. Grapes are subjected to specific pruning, irrigation, canopy management and harvesting, which results in grapes of optimum quality and flavour. The soils are alluvial in origin, with clay loam and stone at 80cm depth.
