A careful selection of the grapes took place in the vineyard. The grapes to produce Soave DOC “La Broia” Roccolo Grassi were gently pressed and the must was fermented in temperature controlled stainless steel tanks. Soave DOC “La Broia” Roccolo Grassi went through full malolactic fermentation and was then aged for a period of 12 months. 50% of the wine was matured in seasoned 22 hectolitre Slovenian oak casks and 50% in concrete vats.
The estate comprises 13 hectares of vineyards with a total production of only 38,000 bottles per annum. The vineyards are made up of calcareous soils of alluvial origin, which are cool in temperature and provide good water drainage.
Roccolo Grassi was established in 1996 by Bruno Sartori and his two children Francesca and Marco. Based in Veneto, they produce wines of unique character and strong personality, which are expressive of their origins. Winemaker Marco Sartori is one of hottest talents in the region. His philosophy is very simple; yields in the vineyard are significantly reduced to obtain a fabulous fruit concentration. The 14 hectares of Roccolo Grassi vines are farmed sustainably and minimal intervention takes place in the winery. The result is a collection of world class wines distinguished by their pure elegance.
