The grapes of Syrah Gran Reserva Viña Echeverría were fermented to dryness in 12,000 and 15,000 litre open stainless steel tanks over a period of eight days. To produce Syrah Gran Reserva Viña Echeverría selected yeasts were used and the temperatures were maintained between 24 to 28°C. Once fermentation was complete, an extended skin maceration took place for an additional 10 days. The wine then went through 100% malolactic fermentation, before being matured in 225 litre French oak barrels, for 12 months.
The vines are grown in the Valle del Rapel, which runs directly south for 60 miles from the edges of Maipo Valley to the edge of the Colchagua province. Bordered on both sides by mountain ranges, the Andes and the Coastal Range, the Valle del Rapel is sheltered from the cooling influences of the Pacific Ocean. The region takes its name from the Rapel River, which divides the valley into two sub-regions, Colchagua Valley in the south and Cachapoal Valley in the north. The river is a vital resource, bringing fresh, mineral meltwater down from the upper Andes.
