The varieties Tempranillo Syrah Roble Dominio de Fontana were picked, destalked and fermented separately in stainless steel tanks at approximately 24°C. A post fermentation maceration took place, with the length of time being individually tailored to the extraction level of each tank. Tempranillo Syrah Roble Dominio de Fontana  underwent full malolactic conversion, which resulted in a softer expression on the palate. 30% to 50% of the wine was transferred to mature in American oak barrels for four months.
This wine is produced exclusively from the selected parcels of Camino Santa Cruz & El Pozo in the Dominio de Fontana estate; in DO Uclés, Central Castile. These highaltitude vines are sustainably cultivated, without the use of pesticides and only minimal treatments are employed. Each variety is carefully managed according to the different soils and growing conditions, in order to achieve perfectly balanced vines, capable of expressing both the character of the variety and the terroir.
Dominio de Fontana produces superb single estate wines from the DO Uclés, Central Castile. The estate is located in one of the most northern and highest areas of Central Castile, with the vineyards situated at 700 to 900 metres above sea level. The ideal growing conditions at this altitude produce wines of great purity, freshness and varietal expression. The estate is managed as an integrated ecosystem, which includes hundreds of century old Quercus oak trees, and the vines are cultivated sustainably. 50% of the vineyard is grown organically and Dominio de Fontana is working towards 100%. These are authentic wines with a sense of place and a distinctive Spanish personality.
