The grapes to produce Torrontés “Alto Molino” Piattelli Vineyards were gently destemmed and pressed. The free-run juice was cold static clarified for 14 to 24 hours at 8°C. The Torrontés “Alto Molino” Piattelli Vineyards must was separated from the lees, leaving the freshest juice. This was vinified with selected yeasts in stainless steel tanks at controlled temperatures between 12 to 16°C. Once fermentation was complete, the wine was transferred to another tank to rest until bottling.
