The grapes to produce the Verdicchio di Matelica DOC “Vigneti del Cerro” Belisario were pressed and the must cold settled before fermentation took place at 13°C for 22 days. The wine was then aged for five months in stainless-steel tanks before bottling.
The grapes for this wine come from a south-facing single vineyard, located at 360 metres above sea level, on the east slopes of the Alta Valle Esina at the foot of San Vicino Mountain, near Matelica. The vines were planted between 1999-2000. The vines are planted at a density of 1,666 to 3,500 plants per hectare and Guyot trained. Yields are approximately seven tonnes per hectare.
Cantine Belisario is a 300 hectare co-operative is situated in Matelica, which is a smaller zone than Castelli di Jesi. The co-operative has 24 organically cultivated vineyards located inland from Castelli di Jesi, where the climate is more continental, where they source grapes for their organic ‘Vigneti B’ Verdicchio. Here, the combination of warm days and cool nights allows the aromatic qualities of the grapes to develop and extends the growing season, so that harvest takes place as late as the second half of October.
